Boost Your Immunity Naturally With This Carrot Ginger Soup

I will never forget being at a dinner party and my friend Coco handing me a cup of this ginger carrot soup. I scarfed it down within seconds and begged for the recipe. It was so rich, so tasty and oh-so-healthy. Basically, the perfect meal to make for my family during the coronavirus lockdown.

The ginger and carrot work together to help boost immunity and ginger is one of the few superfoods that actually earns the name. So right now, while I try to whip up the healthiest recipes I can for my family, I’m recreating one of my favorite soups. You will thank me for this recipe, as I still thank Coco for sharing this delicious soup with me!


Carrots are rich in beta carotene, which your body converts into vitamin A. This nutrient promotes good vision and is important for growth, development, and immune function.

Why I Picked This Recipe

I love a good soup, especially a healthy one that tastes this rich with no butter. If it’s good for you and tastes great, it deserves a spot in my kitchen. I truly can eat this for days.

What Worked

Everything. I love how the Vitamix pureed this soup, giving it the perfect consistency. If you don’t have one, it surely is a staple in my kitchen.

What Didn’t

I felt like it needed more carrots, so go for it and add more! (I mean it is a carrot ginger soup after all!) Feel free to add extra veggies to your taste and preferences. Make it your own!

My Spin On It

I rarely follow measurements so I added more carrots and more coconut milk. If you want, add some ghee butter, but it truly doesn’t need it. Also, if you have leftovers, be sure to store it in mason jars to preserve the freshness and vitamins.


Ginger has a very long history of use in various forms of traditional and alternative medicine. It has been used to help digestion, reduce nausea and help fight the flu and common cold.

Ingredients

  • 2 heaping scoops of coconut oil (preferable Trader Joe’s brand)
  • 4 large shallots
  • 8 medium carrots
  • 1 (2 inch) piece of peeled fresh ginger finely chopped 
  • 1/2 cup of coconut milk
  • Pink salt

Directions

  • Melt the coconut oil and saute chopped shallots until golden (8-10 minutes)
  • Add the carrots and ginger, then cook covered for 8-10 minutes (don’t let the carrots brown)
  • Add 5 cups of water and two tsp of pink salt
  • Simmer covered until carrots are tender (about 25 minutes)
  • Puree soup in a Vitamix or a blender and add black pepper to taste
  • Don’t use a “low fat” coconut milk (what’s the point?)
  • Top with your favorite toppings (seeds, cheese, crackers, etc.)
  • Enjoy!

Carrots are rich in carotenoids, a substance with powerful antioxidant activity that have been linked to improved immune function and reduced risk of many illnesses, including heart disease, various degenerative ailments, and certain types of cancer.
