Mornings used to be a hectic routine here in the Schaffer household. Getting the kids prepped for school, double checking all the errands I had to run, checking in with Bobby before he heads out for work—all our meals had to be quick and simple. (Cold cereal anyone?) But now, we have the time to relax and make a delicious breakfast. It’s one of the few good things about being ordered to stay at home. One of the not so good things? Meal fatigue. 

My family still has busy mornings, but now it’s less about time and more about making new, healthy meals that are good to eat and good for you. (We’re sticking to those resolutions!) And I still want them to be easy enough that my kids can help out in the kitchen. Which is why I’m always brainstorming ways to have fun in the kitchen while still making sure everyone is well-fed and ready to start the day. These seven breakfast recipes are easy, delicious, healthy, and will get you and your family ready for the day—even if it’s spent at home.


The average person sits down to breakfast at 7:31 a.m. during the week and 8:28 a.m. on the weekend.

Ham and Cheese Egg Cups

I’ve found it. The lifesaving, no-brainer breakfast from Kristine’s Kitchen that even I can’t mess up. You can put whatever you want in the egg mix! But personally, I love the sneaky add-in of quinoa or veggies for some extra nutrients.

Freezer-Friendly Breakfast Sandwiches

My freezer is my best friend. This breakfast sandwich recipe from Jess Fuel is ideal for making a big batch and then throwing them in the freezer to last you for the rest of the week. When you’re on a homeschooling schedule or the kids need a quick bite, toss one in the microwave for a couple of minutes and you have the perfect hot meal!
